South African Milk Tart

Sweet Crust Pastry
3/4 cup softened butter
1/2 cup sugar
1 egg
2 cups flour
Pinch of salt
1/4 tsp almond extract (optional)
4 cups of milk
1 tbsp butter
1/2 cup sugar
2 eggs
3 tbsp corn starch
3 tbsp flour
1 tsp vanilla extract
Pinch of salt
1 tbsp cinnamon

Cream butter and sugar. Beat in the egg. Add flour and salt. Knead until a soft dough has formed. Add almond extract while kneading. Chill in fridge for 10 min. Roll out and lime the bottoms and sides of a greased 9 inch pie plate. Bake blind at 350 degrees until golden. 25min. Allow to cool completely.
In a heat proof bowl, whisk together eggs, sugar, cornstarch, flour and vanilla. Set aside. In a medium saucepan heat the milk and butter over medium. Do not boil. Add about 1/4 of the milk to the egg mixture whisking to incorporate it evenly. Pour the mixture back into the saucepan with the remainder of the milk. Return to heat and stir constantly until it thickens. Do not boil. Pour filling into pie crust and let cool completely. Refrigerate before serving. (Approx 4 hours)
